Origin: Being in front of the scenery of the protected forest in the small state of El Salvador, along the wide strip of organic land extending from Mexico to Panama, is absolutely exciting. San Vicente volcano dominates few metres away, which presence makes El Carmen’s cultivated land even richer. Here, at about 1,400 m a.s.l., one of the most refined ‘speciality coffee’ is produced: Pacamara, coffee with fine acidity that delights for its contamination of citrus fruits and spices.
Variety: Arabica, Pacamara
Processing method: Washed/dried in the sun
Harvest time: December – January
Elevation: 1.300 – 1.400 metres
Profile in cup: Its full-bodiness highlights a fine, not citric acidity of tangerine and blood oranges. Very balanced coffee with notes of malt, and aftertaste featuring spicy hints of ginger.
