THE PRODUCER: La Caplana
Nose: Strong scents of black cherry.
Taste: The palate is well-liked for balance, sweetness of tannins and a soft and persistent finale.
Production:The bunches of grapes for the composition of Dolcetto are harvested in early September, from a 20-year old vineyard called the Aureliana. The vinification process takes place in casks placed horizontally, in which the must is subjected to a short maceration of about four days (to increase its delicacy) at a temperature of about 28 °. The rest of the process takes place in steel barrels and lasts for 6 months.
